Avoid Kazzak, the most toxic community in this game. Wobling Goblin is a lesser-known PVE server (progressing through the original trilogy, currently in Vanilla) based out of Oceania. Population is definitely low, however a single character can learn all professions in the game (blacksmithing, alchemy, skinning, etc.) instead of having a cap. Stormrage, Sargeras and Proudmoore have healthy Alliance populations. However, even they are not immune to the content lull so you’ll still encounter a lot of empty spaces on those servers. Dalaran-Wow has been my default server for the past 6-7 years, and it is great too, just low pop now. Dalaran wow has outdated inferior scripts and low pop, while Cromiecraft is still in its lvling phase (they release 10 by 10 lvls every few months or so) with sub 1k pop at best and by now is considered a meme in the community.
